摘  要:本试验旨在研究霉菌毒素吸附剂对西门塔尔育肥牛屠宰性能、血清生化指标、肉品质及组织中霉菌毒素残留的影响。选择体重[(365.64±28.66)kg]相近、体况良好的西门塔尔育肥牛32头,随机分成2组,每组16头。2组分别在全混合日粮(TMR)基础上添加0(对照组)、0.2 g/kg DM(试验组)霉菌毒素吸附剂。预试期7 d,正试期193 d。结果表明:1)试验第168天,与对照组相比,试验组血清中尿素氮(UN)含量显著降低了10.94%(P<0.05),血清中谷丙转氨酶(ALT)活性极显著降低了44.26%(P<0.01)。2)与对照组相比,试验组肝脏中黄曲霉毒素B_(1)(AFB_(1))、呕吐毒素(DON)含量分别极显著降低了22.36%、40.59%(P<0.01),试验组肌肉中AFB_(1)、DON含量分别显著降低了58.81%、26.31%(P<0.05)。3)饲粮中添加霉菌毒素吸附剂对屠宰性能无显著影响(P>0.05)。4)饲粮中添加霉菌毒素吸附剂对肉品质和常规营养成分无显著影响(P>0.05)。5)饲粮中添加霉菌毒素吸附剂对背最长肌脂肪酸含量无显著影响(P>0.05)。综上所述,饲粮中添加0.2 g/kg DM霉菌毒素吸附剂对西门塔尔育肥牛屠宰性能和肉品质无显著影响,降低了血清中UN含量和ALT活性,减少了肌肉和肝脏中霉菌毒素残留,改善了肝脏健康状况。The purpose of this experiment was to study the effects of mycotoxins adsorbent on slaughter performance,serum biochemical parameters,meat quality and tissue mycotoxin residue of Simmental fattening cattle.A total of 32 Simmental cattle with good health condition and similar body weight[(365.64±28.66)kg]were randomly divided into 2 groups with 16 cattle in each group.Cattle in 2 groups were fed the total mixed rations(TMR)supplemented with 0(control group)and 0.2 g/kg DM(test group)mycotoxin adsorbent.The pre-experimental period lasted for 7 days,and the experimental period lasted for 193 days.The results showed as follows:1)on day 168,compared with the control group,the serum urea nitrogen(UN)content of test group was significantly decreased by 10.94%(P<0.05),and the serum glutamic-pyruvic transaminase(ALT)activity was significantly decreased by 44.26%(P<0.01).2)Compared with the control group,the contents of aflatoxin B_(1)(AFB_(1))and deoxynivalenol(DON)in liver of test group were significantly decreased by 22.36%and 40.59%(P<0.01),respectively,and the contents of AFB_(1) and DON in muscle of test group were significantly decreased by 58.81%and 26.31%(P<0.05),respectively.3)Dietary mycotoxin adsorbent addition had no significant effects on slaughter performance(P>0.05).4)Dietary mycotoxin adsorbent addition had no significant effects on meat quality and common nutrition component(P>0.05).5)Dietary mycotoxin adsorbent addition had no significant effects on longissimus dorsum fatty acid contents(P>0.05).In conclusion,adding 0.2 g/kg DM mycotoxin adsorbent in diet have no significant effects on the slaughter performance and meat quality of Simmental fattening cattle,decrease the serum UN content and ALT activity,reduce the mycotoxin residue in muscle and liver,and improve liver health.
