摘 要:为评估黄淮肉羊新品种的肉用性能,在育种核心群随机抽取6月龄145只羊(公58只,母87只),采集血样进行CLPG(Callipyge,双肌臀)基因型检测及肉用性能关联性分析;随机抽取6月龄公、母羊各6只进行屠宰试验,进行屠宰性能和肉品品质检测。结果表明:黄淮肉羊群体中存在CLPG基因C→T的突变型,CC基因型频率为0.821,CT基因型频率为0.179;CT基因型个体在腿臀围和眼肌面积上显著高于CC基因型个体(P<0.05);6月龄羊屠宰率为54.60%±1.95%,羊肉剪切值为37.95±11.83 N,GR值为13.97±4.28 mm,肌肉脂肪含量为2.50%±0.72%,蛋白质含量为21.07%±0.65%,必需氨基酸与非必需氨基酸比值为1.1,不饱和脂肪酸含量高于饱和脂肪酸含量;羊肉中矿物质元素磷、钙、铁、锌、铜含量丰富。研究结果表明:黄淮肉羊群体中存在CLPG基因C→T突变型,双肌臀特征明显,屠宰性能优越,肉品品质优良,满足工厂化肉羊品种的要求。In order to evaluate the mutton performance of the new breed of Huang-huai sheep,145 six-month-old Huang-huai sheep(♀=87,♂=58)were randomly collected from the breeding core group.The blood samples were collected for the CLPG gene polymorphism testing and mutton performance correlation analysis.12 six-month-old Huang-huai sheep(♀=6,♂=6)were randomly selected for slaughter test,and the slaughter performance and mutton quality were tested.The results showed that the frequency of the CC genotype was 0.821,the frequency of the CT genotype was 0.179,which was significantly higher than that of the CC genotype in the leg-hip circumference and eye muscle area(P<0.05).The slaughter rates of the 6-month-old sheep were 54.60%±1.95%,the shear value of the mutton was 37.95±11.83 N,the GR value was 13.97±4.28 mm,the muscle fat content was 2.50%±0.72%,and the protein content was 21.07%±0.65%.The ratio of essential amino acids to non-essential amino acids was 1.1,and the content of unsaturated fatty acids was higher than that of the fatty acids.The mutton was rich in mineral elements such as phosphorus,calcium,iron,zinc,and copper.The new breed of the sheep had CC and CT genotypes in CLPG.The results demonstrated that the CLPG gene C→T mutation existed in Huang-huai sheep flock,with obvious double muscle gluteal characteristics,superior slaughter performance,and good meat quality,reaching the requirements of factory mutton sheep.
