摘 要:采用实验室干法制备糯米粉,研究不同含水量、不同制粉机械、不同粒度范围对制成糯米粉的水分、蛋白质、灰分、粒径分布以及色度的影响。结果显示:其他条件相同时,糯米原料含水量的不同会影响糯米粉的含水量、蛋白质含量、灰分、粒度、色度;糯米粉蛋白质含量和灰分随糯米粉含水量的减小而增大。原料水分为15.5%的糯米粉,其粒度最小,粉质最细;使用超微粉碎机制出的糯米粉蛋白质含量高、粒径小、色度较好。糯米粉的粒度大小对糯米粉的灰分影响不大,粒度小于120目的糯米粉在粒径、色度方面表现出良好的特性;粒度在80~100目的糯米粉的水分含量与蛋白质含量较高。Glutinous rice flour was prepared by laboratory dry method.The effects of different water content,milling machinery and particle size range on water,protein,ash,particle size distribution and chromaticity of glutinous rice flour were studied.The results show that when other conditions are the same,the different water content of glutinous rice raw materials will affect the water content,protein content,ash content,particle size and chromaticity of glutinous rice flour;The protein content and ash content of glutinous rice flour increased with the decrease of water content of glutinous rice flour.Glutinous rice flour with 15.5%water content has the smallest particle size and the finest powder;The glutinous rice flour prepared by ultra-fine pulverizer has high protein content,small particle size and good chromaticity.The particle size of glutinous rice flour has little effect on the ash content of glutinous rice flour.Glutinous rice flour with particle size less than 120 mesh shows good characteristics in particle size and chromaticity;The water content and protein content of glutinous rice flour with particle size between 80 mesh and 100 mesh are higher.
