摘 要:目的:建立煎炸过程用油近红外快速检测模型,为煎炸过程用油市场监管提供准确可行的快筛手段。方法:通过车载近红外光谱仪的中文操作平台结合OPUS 5.0操作软件,建立煎炸过程用油相关系数法检验方法模型。结果:建立了近红外光谱相关系数法检验方法模型,并应用该方法对各环节煎炸过程用油进行初筛,结合煎炸过程用油酸价及过氧化值的测定结果,对目前市场及家庭煎炸过程用油的质量状况进行分析。结论:近红外光谱相关系数法可以做为煎炸过程用油市场抽样初筛方法,对煎炸过程用油市场靶向抽样具有重要作用。Objective:To establish a rapid near-infrared detection model for oil used in frying,and to provide a feasible quick screening method for oil market supervision in the frying process.Methods:Through the Chinese operation platform of vehicle mounted near-infrared spectrometer and opus 5.0 operation software,the test method model of oil correlation coefficient method in frying process was established Results:The test method model of near-infrared spectroscopy correlation coefficient method was established,and the method was used to screen the oil used in each link of frying process.Combined with the determination results of acid value and peroxide value of oil used in frying process,the quality status of oil used in market and family frying process was analyzed.Conclusion:The near-infrared spectroscopy correlation coefficient method can be used as a preliminary screening method for the oil market sampling in the frying process,and it plays an important role in the targeted sampling of the oil market in the frying process.
