摘 要:澳洲坚果是我国重要的木本油料之一,目前种植面积已跃居世界第一位,具有极高的经济价值。近年来发现澳洲坚果含有较高含量的棕榈油酸(约20%),它是一种Omega-7脂肪酸,具有较高的功能价值,它在人体健康中发挥着极为重要的作用。天然的Omega-7脂肪酸来源常见于凤尾鱼、鲑鱼等深海鱼类或海藻中,植物来源主要包括沙棘果和澳洲坚果等。其中澳洲坚果在我国种植面积大,产量高,并且含油率高达72%以上,具有广泛用于获取Omega-7脂肪酸并应用于食品工业的前景。随着相关研究的深入,澳洲坚果中棕榈油酸的营养价值和保健功能越来越为人们所认识。本文综述棕榈油酸提取理化性质、提取分离、功能研究现状及产品开发情况,旨在为澳洲坚果中棕榈油酸资源的开发利用提供参考。As an important woody oil plant in China,macadamia has the biggest planting area in the world and high economic value.Recent research finds that macadamia contains high level of palmitoleic acid(about 20%),an Omega-7 fatty acid with high functional value,which plays an important role in human health.Natural Omega-7 fatty acid commonly originates from anchovies,salmons,and other deep-sea fishes,and from plants such as macadamia and seabuckthorn.With planting area ranking first in the world,high yield and oil content over 72%,macadamia has the prospect of being widely used in obtaining Omega-7 fatty acid and applying to the food industry.In recent years,as the study progressed,the nutritional value and healthcare function of palmitoleic acid in macadamia are increasingly recognized.This paper reviews the physicochemical properties,extraction and separation,healthcare functions and products development of palmitoleic acid in macadamia,providing references for the development and utilization of palmitoleic acid in macadamia.
