摘  要:为探究生产过程中培养料灭菌后的含水量变化是否会影响真姬菇出菇的产量及品质,对灭菌后的真姬菇栽培瓶内培养料进行随机取样,测定并分析了发生不同含水量变化的栽培瓶后续的菌丝生长状况、子实体产量及外观品质。结果显示,灭菌过程中培养料失水量在10~30 g之间的栽培瓶在出菇方面表现出较为明显的优势,不仅单产高于失水量在10 g以下或灭菌过程中培养料吸水增重14.81~54.12 g的栽培瓶,且出菇整齐度较高、菌柄较短。说明真姬菇栽培瓶在灭菌环节的含水量变化对出菇有一定影响,采取相应措施控制栽培瓶进水有助于提高出菇的产量和外观性状,提升企业的经济效益。In order to explore the effect of water content change of the substrates after sterilization on the yield and product quality of Hypsizygus marmoreus,the culture bottles after sterilization were randomly sampled,and the growth status of the mycelium,the yield and the appearance quality of the fruiting bodies were determined.The results showed that the cultivation bottle with water loss of substratesbetween 10~30 g shows obvious advantages in mushroom production,not only the yield is higher than the cultivation bottle with water loss less than 10 g or the water absorption and weight gain of substratesl during sterilization is 14.81~54.12 g,but also the uniformity of mushroom production is high and the stipe is short.In the future,taking corresponding measures to control water absorption of substrates during the sterilization process will help increase the yield and appearance of the Hypsizygus marmoreus,and improve the economic benefits of the enterprise.
