摘  要:选用水稻吉粳105和宁粳47号作为试验材料,分析3种不同盐碱浓度胁迫处理下两种稻米品质的动态变化。结果表明:随着盐碱胁迫梯度的增加,稻米加工品质显著下降,盐碱胁迫对整精米率影响最大,其次为精米率,糙米率受影响最小;外观品质中长宽比变化不大,垩白粒率和垩白度随着盐碱胁迫梯度的增加而显著增加;稻米中直链淀粉含量显著下降,蛋白质含量显著增加,最终导致稻米品质变差。本研究结果可为分析盐碱地水稻品质降低提供基础资料。Jijing 105 and Ningjing No.47 were selected as experimental materials to analyze the dynamic changes of rice quality under different salinity and alkali stress in three different soil stress treatments.The results showed that with the increase of saline-alkali stress gradient,the processing quality of rice decreased significantly.The whole mutilated rice rate was the most susceptible to saline-alkali stress,followed by the mutilated rice rate,followed by the brown rice rate.The ratio of length to width had little change in appearance quality,but the chalkiness grain percentage and chalkiness degree increased significantly with the increase of saline-alkali stress gradient.The content of amylose in rice decreased significantly,and the content of protein increased significantly,which eventually led to the deterioration of rice quality.The results of this study provide basic data for the analysis of rice quality degradation in saline-alkali land.
