摘  要:根据中医食疗理论,方便特色营养粥以毕节特色农产品织金皂角米、威宁苦荞米、织金竹荪为主要原料,以织金薏仁米、威宁芸豆、毕节糯米、大方糯玉米等当地特色农产品为辅料,经挑选、清洗、浸泡、初煮、熟制等工艺制成。该产品食用方便,汤汁呈胶质半透明,香糯润口、细滑、入口即化,能健脾养胃,有祛痰、润肠、利尿、通便、降糖、消滞、益气安神的功效。通过实践操作和综合感官评价来确定粥的最佳配方和工艺。因皂角米熬制所得胶状物有很好的黏稠作用,故此制品配料中没有使用任何添加剂,以保证“健康养生、粥伴一生”的产品创意理念,该制品曾获贵州省“黔货出山”杯第一届大学生创新大赛二等奖,通过产品的再研究开发,从而助推“黔货出山”。According to the theory of traditional Chinese medicine diet therapy,this convenient characteristic nutritious porridge was made from Bijie characteristic agricultural products,such as Jinzaojiao rice,Weining Tartary buckwheat rice and Zhijin bamboo shoot.It was made by selecting,cleaning,soaking,initial cooking ripening and so on.This product was convenient to eat,soup was glial translucent,fragrant waxy moist mouth,fine slippery,entrance was changed,can invigorate spleen and nourish stomach,have expectorant,moisten intestines,diuretic,defecate,reduce sugar,eliminate stagnation,invigorate qi and calm the mind.The best formula and process of porridge were determined by practical operation and comprehensive sensory evaluation.The product has won the second prize of the first university student innovation competition of Guizhou province“Guizhou goods out of mountain”cup,through the product re-research and development,thus promoting“Guizhou goods out of mountain”.
