摘  要:以鸡枞菌为原料,采用响应面优化提取鸡枞菌蛋白,并研究对运动大鼠肌肉增长和运动能力的影响。鸡枞菌蛋白的最佳工艺条件为:NaCL浓度为2.1%、提取温度为51℃、pH为10.60。通过3次平行实验,用来验证该工艺的稳定性,得出鸡枞菌蛋白平均提取率为63.38%,与预测值接近。同时运动大鼠实验表明:通过对质量指数的测定可知,鸡枞菌蛋白对大鼠的肌肉增长有积极的作用。并且可以延长大鼠的力竭运动时间,减少血尿素氮与血乳酸的生成,缓解大鼠的疲劳状态,从而提高大鼠的运动能力。The response surface optimization was used to extract the protein of Termitomyces albuminosus from abiotic bacteria,and the effects on muscle growth and exercise ability of the exercise rats were studied. The optimum extraction conditions were as follows :NaCl concentration was 2.1%,extraction temperature was 51℃,and pH was 10.60. Three parallel experiments were carried out to verify the stability of the process. The average extraction rate of protein was 63.38%,which was close to the predicted value. At the same time,the exercise experiment of rats showed that :Through the determination of the mass index,the protein of Termitomyces had a positive effect on the muscle growth of rats. It can also prolong the time of exhaustive exercise,reduce the production of blood urea nitrogen and blood lactic acid,relieve the fatigue state of rats,and improve the exercise ability of rats.
