摘 要:本试验旨在评估臭氧对水线消毒的影响,以保障肉鸭饮水健康和消费者食品安全。试验分为两部分:一是使用臭氧分别处理10^(3)~10^(7)CFU/mL大肠杆菌溶液,涂板观察其生长情况;二是从鸭舍随机选取12条水线,其中6条为臭氧冲洗试验组,进行臭氧冲洗;另外6条作为对照组,进行高压冲洗。采集冲洗前水源、水线和冲洗2、5min和8 min后水线样品,检测细菌和抗菌药含量。结果表明:在实验室条件下,大肠杆菌浓度低于10^(6)CFU/mL时,臭氧杀菌效果良好。鸭场水源水的菌落总数合格,无抗菌药残留。冲洗前,水线菌落总数和大肠菌群数均超标,存在多种抗菌药残留;冲洗2 min后,与冲洗前相比,试验组和对照组水线中氟苯尼考含量均显著降低(P<0.05);8 min后,与冲洗前相比,试验组水线中多西环素、喹氟沙星和恩诺沙星含量显著降低(P<0.05);与对照组相比,试验组水线中抗菌药含量显著降低(P<0.05),清除效率达100%,而对照组只有84.62%。冲洗后,试验组和对照组菌落总数和大肠菌群数均显著低于冲洗前(P<0.05),其菌落总数的清除效率分别为97.70%和84.62%。本试验表明肉鸭场水线细菌污染和抗菌药残留严重;通过臭氧冲洗消毒水线,能显著降低细菌污染,消除抗菌药残留,其效果优于高压冲洗。This study evaluated the effect of ozone on microbial disinfection and antibiotic residue clearance in order to ensure healthy drinking for meat ducks and food safety for consumers.Firstly,different concentrations of Escherichia coli solution from 10^(3) CFU/mL to 10^(7) CFU/mL were treated with ozone,and in vitro growth of bacteria was quantified by colony counts.Secondly,12 nipple drinkers were randomly selected from the duck house,with 6 for ozone disinfection(experimental group),and 6 for high pressure flushing(control group).The samples of source water and nipple drinkers before the experiment,and the water samples after disinfection for 2,5 min and 8 min were collected to detect microbial contamination and antibiotic residue.The results showed that under laboratory conditions,ozone had good disinfection efficacy when the concentration of E.coli was lower than 10^(6) CFU/mL.Based on total colony count,the water source in the duck farm met the quality standard,and had no antibiotic residue.Before the experiment,samples from nipple drinkers yielded high numbers of total colony count and coliform bacteria,and contained many antibiotic residues;after 2 min flushing,the content of florfenicol in experimental and control groups were significantly reduced(P<0.05);after 8 min flushing,the contents of doxycycline,flocuxacin and enrofloxacin in experimental and control groups were significantly decreased compared to before the experiment(P<0.05).In contrast to control group,the antibiotic content in experimental group was significantly reduced(P<0.05).At the end of experiment,the total colony count and coliform bacteria in experimental and control groups were significantly lower than those before the experiment(P<0.05),with the total colony count clearance efficiency of 97.7% and 84.62%,respectively.Thus,microbial contamination and antibiotic residues in the nipple drinkers of commercial meat duck farms were not uncommon;ozone disinfection of nipple drinkers helped significantly reduce microbial contamination and elim
