摘 要:分析了3个萝卜品种(C70922、C3156和C83471)肉质根的耐糠心特性及品质。结果表明:3个品种在生育期60 d时肉质根均发育正常,在生育期70 d之后糠心程度存在差异;C70922耐糠心,C3156不耐糠心,而C83471介于两者之间;在未糠心的成熟肉质根中,C70922的可溶性糖、还原性糖、可溶性淀粉、纤维素含量均显著高于C3156和C83471的;C83471的维生素C和可溶性蛋白含量显著低于C3156的,游离脯氨酸含量显著低于C70922和C3156的:C70922的综合得分最高,品质最佳,C83471次之,C3156最低;萝卜肉质根横切面不同部位的糠心并不是同步发生的,而且具有一定的随机性。The hollowness-resistant characteristics and quality analysis of fleshy root in the three radish varieties(C70922,C3156 and C83471)were analyzed.The results showed that the fleshy roots of the three varieties developed normally at the growth stage of 60 days.However,there were significant differences of hollowness degree in the radish roots after 70 days of growth.Radish C70922 was resistant to hollowness.C3156 was not resistant to hollowness,and the variety of C83471 was between the two.The soluble sugar,reducing sugar,soluble starch and cellulose content of radish C70922 were significantly higher than those of C3156 and C83471.However,the vitamin C and soluble protein content of C83471 was significantly lower than those of C3156,while the free proline content was significantly lower than C70922 and C3156.Furthermore,factor analysis via SPSS software showed that the composite quality score of radish C70922 was the highest,followed by C83471 and C3156.The hollow characteristics in different parts of the cross section of the fleshy root did not occur synchronously,and had certain randomness.
