摘　　要：常量矿物元素是畜禽饲料添加剂的重要组成成分,且常量矿物元素是畜禽机体重要的组成部分,参与机体营养代谢,影响畜禽的生长性能,同时部分研究显示常量矿物元素也是影响肉品质的重要因素之一。已知影响畜禽肉品质量的因素较为复杂,畜禽的种类、性别、年龄、饲喂方式及营养成分等均可影响畜禽的肉品质,且常量矿物元素作为畜禽生长的营养元素也是影响畜禽肉品的因素之一。目前关于常量矿物元素的研究大多集中在畜禽生长性能、蛋、奶等畜禽产品的研究方面,对畜禽肉品质影响的研究较少。本文主要对钠、钾、镁、硫、钙和磷等常量矿物元素作为饲料添加剂饲喂畜禽以及屠宰后将肉品腌制处理对畜禽肉品质影响的简述,以期为进一步研究常量矿物元素改善畜禽肉品质提供参考。Major mineral elements are important components of livestock and poultry feed additives, as well as of livestock and poultry bodies, which can participate in nutritional metabolism and affect the growth performance of livestock and poultry. At the same time, some studies showed that major mineral element was also one of the important factors affecting meat quality. It has been known that the factors affecting the quality of livestock and poultry meat are complex, such as livestock and poultry’s species, sex, age, feeding mode and nutritional composition of feed, and as nutrient elements for the growth of livestock and poultry, the major mineral element is also one of the factors affecting the meat quality. At present, the studies of major mineral elements are mostly focused on the growth performance, eggs, milk and other aspects, but there are few studies on the effects of major mineral elements on livestock and poultry meat quality. In this paper, the effects of major mineral elements such as sodium, potassium, magnesium, sulfur, calcium and phosphorus on the quality of livestock and poultry meat when the mineral elements were used as feed additives and the meat was salted after slaughter, were briefly introduced, hoping to provide reference for further study of major mineral elements to improve the quality of livestock and poultry meat.
