摘　　要：【目的】探明中式有机晒红烟“嚼烟”的生产工艺参数,为制作符合设计要求的中式嚼烟产品提供参考。【方法】采用感官评价和化学分析方法研究不同工艺条件下中式有机晒红烟的感官和化学成分变化规律,结合晒红烟烟叶特性和嚼烟产品要求,设计嚼烟产品的生产工艺流程,并对其关键工艺参数进行优化。【结果】晒红烟可作为嚼烟产品的原料;10%NaHCO_(3)溶液处理可以调节烟草pH,改善嚼烟口感质量,提高晒红烟作为嚼烟原料的可用性;添加10%~20%的风味剂甘草可改善嚼烟的感官质量;采用烘干和蒸片+烘干技术均可提高晒红烟烟叶的烘烤香和焦甜香,且蒸片+烘干技术效果更佳。【结论】采用有机晒红烟制作的中式嚼烟保存香味的时间更为持久,回味悠长,嚼后口腔干净,口气清新,可直接补充人体需要的植物碱,并有清洁牙齿、生津、止咳清痰的作用。【Objective】The production technological parameters of Chinese chewing tobacco made of organic sun-cured red tobacco are explored to provide a reference for production of Chinese chewing tobacco according to the designed requirement.【Method】The change rules of sensory quality and chemical components of Chinese organic sun-cured red tobacco under different technological conditions are studied by the sensory evaluation and chemical analysis methods.The production technological process of Chinese chewing tobacco products is designed according to the characteristics of sun-cured red tobacco and requirement of Chinese chewing tobacco products.The key technological parameters are optimized.【Result】The sun-cured red tobacco can be used as the raw material of chewing tobacco products.10% NaHCO_(3) solution treatment can adjust pH of tobacco,improve taste quality of chewing tobacco and raise the usability of sun-cured red tobacco for producing chewing tobacco.Adding 10%~20% licorice can improve the sensory quality of chewing tobacco.The drying and steaming-drying techniques both can increase cured aroma and sweet aroma of sun-cured red tobacco and the effect of the steaming-drying technique is better than the drying technique.【Conclusion】The chewing tobacco made of sun-cured red tobacco can keep the fragrance for a longer time and have lasting aftertaste.Chewing tobacco with the functions of cleaning teeth,engendering liquid,relieving a cough and cleaning phlegm can supply the vegetable alkaloid for the human body needs.
