摘 要:在集约化养殖条件下,确保虾类健康是养虾业可持续发展的关键。维生素C作为鱼虾类重要的营养和免疫调节物在水产业已得到广泛应用。国内外针对维生素C对虾类的影响已开展了诸多研究,主要集中在估计最大生长和免疫反应所需的最低维生素C需求,以及制定成本最低的饲料。但是,维生素C对虾类的健康调节作用和机制还需进一步研究。本文综述了维生素C的结构、基本特性和剂型,及其对虾类生长、营养、免疫和抗逆性等方面的影响,在此基础上指出维生素C在虾类中的今后研究方向。Ensuring the health of shrimp and crayfish under intensive aquaculture conditions is the key to the sustainable development of aquaculture industry of these crustaceans.Vitamin C as an important nutrient and immune modulator for fish and shrimp has been widely used in the aquaculture industry.At present,research on the impact of vitamin C on shrimp and crayfish at home and abroad has made a lot of progress,mainly focusing on estimating the minimum vitamin C requirements for maximum growth and immune response,and formulating the lowest cost feed.However,the health regulation effect and mechanism of vitamin C on shrimp and crayfish needs further research.This article reviews the structure,basic properties and different forms of vitamin C,as well as its effects on the growth,nutritional quality,immune and stress resistance of shrimp and crayfish.At the same time,it points out the future research direction of vitamin C in shrimp and crayfish.
