摘 要:采用喷雾干燥法对元宝枫籽油进行包埋,并对微胶囊化工艺条件进行优化优化的制备工艺为:麦芽糊精与变性淀粉质量比为3.54∶1、壁材质量分数为28.1%、壁芯比为2.51∶1,元宝枫籽油微胶囊包埋率为85.7%;大豆分离蛋白与阿拉伯糖质量比为5∶1、壁材质量分数为7.5%、壁芯比为1∶1,元宝枫籽油微胶囊包埋率为89.09%。差式扫描量热仪(DSC)、傅里叶红外光谱分析仪(FTIR)和扫描电子显微镜(SEM)分析结果表明:用大豆分离蛋白和阿拉伯糖对元宝枫籽油的包埋效果更优,更利于微胶囊粉末油脂的储藏和使用。The spray drying method was used to embed Acer truncatum seed oil,and the microencapsulation process conditions were optimized.The preparation process was as follows:when the mass ratio of maltodextrin to modified starch was 3.54∶1,the wall material concentration was 28.1%,and the wall-core ratio was 2.51∶1,the microencapsulation rate of Acer truncatum seed oil was 85.7%;When the mass ratio of soybean protein isolate to arabinose was 5∶1,the concentration of wall material was 7.5%,and the ratio of wall to core was 1∶1,the embedding rate of Acer truncatum seed oil microcapsules was 89.09%.The microstructure of microencapsulated oil was analyzed by Fourier transform infrared spectroscopy(FTIR)and scanning electron microscope(SEM).The thermal characteristics of microencapsulated grease were analyzed by differential scanning calorimetry(DSC).The results indicated that the encapsulation effect of soybean protein isolate and arabinose on Acer truncatum seed oil was better,which was more conducive to the storage and use of microencapsulated powder oil.
