摘  要:目的筛选浸渍法制备杜仲酒的最佳制备工艺。方法以松脂醇二葡萄糖苷、绿原酸、丹参酮Ⅰ、丹参酮ⅡA、隐丹参酮、丹酚酸B、阿魏酸这7种指标性成分的含量及总固体含量为考察指标,通过单因素考察及正交实验考察酒的度数、加酒量及浸渍时间对制备工艺的影响,从而筛选出浸渍法制备杜仲酒的最佳制备工艺。结果确定杜仲酒的最佳浸渍制备工艺为加入14倍量的52度酒,浸渍60 d。浸渍法制备杜仲酒的3批验证中各有效成分含量及总固体含量均高于正交实验组,且各有效成分及总固体含量的RSD均小于5%,此工艺合理、稳定、可靠。结论经筛选出的最佳工艺制备的杜仲酒有效成分含量高,稳定性好,为个体化酒剂的生产工艺的研究奠定了实验基础。OBJECTIVE Screening the best preparation technology of Eucommia ulmoides wine by impregnation method.METHODS The contents and total solid contents of seven index components,including Pinoresinol diglucoside,chlorogenic acid,tanshinone Ⅰ,Tanshinone ⅡA,cryptotanshinone,salvianolic acid B and ferulic acid,were taken as the indexes,the influence of alcohol degree,alcohol content and ultrasonic time on the preparation of Eucommia ulmoides wine was investigated by single factor and orthogonal experiment,so as to select the best preparation of Eucommia ulmoides wine.RESULTS The optimum impregnation technology of Eucommia ulmoides oliver wine was determined as adding 14 times of 52 degree liquor for 60 days.The contents of effective components and total solid in three batches of Eucommia ulmoides wine prepared by impregnation method were higher than those in the orthogonal test group,and the RSD of each effective component and total solid content was less than 5%.CONCLUSION The content of effective components in Eucommia ulmoides oliver wine is high and the stability is good,which lays the experimental foundation for the research of individual wine preparation technology.
