摘 要:中药是中华民族的瑰宝,中药的质量成为制约其发展的重要因素,而干燥技术的现代化是中药发展的重要环节。冷冻干燥技术可较好地保持物料的原有形态及其中含有的营养物质,获得较高质量的干燥物。介绍了冷冻干燥技术的原理及发展,着重总结冷冻干燥技术在中药领域的研究进展,包括冷冻干燥技术应用于中药加工的目的、影响因素,以及冷冻干燥对药材组织成分的影响,以期为中药冷冻干燥的系统研究提供新思路。Traditional Chinese medicine(TCM)is the treasure of the Chinese nation.The quality of TCM has become an important factor restricting its development,and the modernization of drying technology is an important link in the development of TCM.The freeze-drying technology can keep the original form and the nutrients of the materials,and obtain the high-quality dry matter.This paper introduced the principle and development of freeze-drying technology,and summarized the research progress of freeze-drying technology in field of TCM,including the purpose of freeze-drying technology applied in the processing of TCM,the influencing factors,and the influence of freeze-drying on the tissue composition of TCM,so as to provide new ideas for the systematic research of freeze-drying of TCM.
