摘 要:深色含油食品在指示剂滴定酸价时,由于油脂颜色较深,存在干扰,难以判断滴定终点,导致检测结果存在偏差。本试验采用不同方法测定酸价,并对电位滴定仪器参数进行优化,提高深色油脂酸价检测的准确度。结果表明,电位滴定法可以避免油脂本身颜色的干扰,具有准确度高、操作简单、精密度好的特点,更适用于深色食品中油脂酸价的测定。The indicator titration method for the determination of acid value is applied to determine the dark oily food, which is difficult to determine the endpoint of titration. In order to improve the determination accuracy of acid value of dark oily food, the acid value was determined by different methods, and the working parameters of potentiometric titrator were optimized. Results showed that the potentiometric titration method was with high sensitivity, good precision, little color interference and can accurately measure the acid value of the dark oily food.
