摘　　要：我国外卖消费人群已达到4.6亿人,庞大的市场突显出外卖食品消费的不透明性、信息不对称性等一系列问题。从全面质量管理角度分析外卖食品供应过程中决定食品安全水平的影响因素,构建出“人、机、料、管、环”5个水平变量的系统动力学模型,以资金投入作为系统安全水平的主要控制因素,通过遗传算法筛选出资金投入的最优配比,计算状态变量变化曲线的回归系数,比较“最优投入比”“均分投入比”“无投入”3种资金投入方式的差异,从而为保障外卖餐饮安全性提供理论支撑和决策依据。研究表明:5个子系统的资金投入比例约为0.35:0.35:0.01:0.04:0.25时系统安全状态最优,在第12个月时达到及格水平,并且得出机因子系统对资金投入的敏感度最强。The number of takeaway consumers in China has reached 460 million.The huge market highlights a series of problems such as the opacity and information asymmetry of takeaway food consumption.From the perspective of total quality management,we analyze the factors that determine the food safety level in the process of takeaway food supply.A system dynamics model with five horizontal variables of“human,machine,material,method,and environment”is constructed,and capital investment is used as the main control factor of the system security level.The optimal ratio of capital investment is screened out through genetic algorithm,and the regression coefficient of the state variable curve is calculated and the differences between the"optimal input ratio","equal input ratio"and"no input"three capital input methods are compared,so as to provide theoretical support and decision-making basis for ensuring the safety of takeaway catering.The research shows that:the capital investment ratio of the five subsystems is about 0.35:0.35:0.01:0.04:0.25 when the system security state is optimal,and it reaches the passing level at the 12th month,and the machine factor system is the most sensitive to capital investment.
