摘 要:研究热风(60℃)、远红外辐射(50℃、48 h)和真空冷冻(-20℃、12 h,-80℃、12 h,-80℃、1 kPa、48 h)3种干燥方式对猴头菌(Hericium erinaceus)子实体多酚提取效果、体外抗氧化和细胞水平抗氧化活性的影响。结果表明:真空冷冻干燥处理组的游离酚、结合酚的提取得率(0.319%、0.035%)和纯度(20.784%、87.165%)较高。在3种干燥处理组中,游离酚对DPPH自由基的清除率和总抗氧化能力均以热风处理组最佳,而不同处理组的结合酚对DPPH自由基的清除率差异不显著,其总抗氧化能力则以热风处理组最佳;与体外抗氧化检测结果不同,猴头菌子实体游离酚与结合酚对H;O;诱导RAW264.7细胞氧化损伤的修复效果均以真空冷冻处理组最佳。Three drying methods, hot air drying(H, 60 ℃), far-infrared radiation drying(I, 50 ℃ for 48 h) and vacuum freeze drying(F,-20 ℃ for 12 h,-80 ℃ for 12 h,-80 ℃ and 1 kPa for 48 h), were studied for their effects on extraction and antioxidant activity of polyphenols in Hericium erinaceus fruiting bodies(HEFs). The results showed that vacuum freeze drying resulted in better extraction rates of both free(0.319%) and bound(0.035%) polyphenols with a higher purity(free polyphenols 20.784%, bound polyphenols 87.165%) than the other two drying treatments. Among the three drying treatments, H treatment resulted in the greatest DPPH scavenging rate and the strongest total antioxidant capacity of free polyphenols. There was no significant difference between different treatments on DPPH scavenging rate of bound polyphenols. H treatment showed a stronger total antioxidant capacity of bound polyphenols than the other two treatments. On the other hand, both free and bound polyphenols of fruiting bodies treated with F showed the best reparative effect on H;O;-induced oxidative damage to RAW264.7 macrophages.
