摘 要:水稻是世界主要粮食作物之一,我国多数地区和人口以大米为主食。稻谷收获后若不能及时干燥到安全水分将会产生霉变,造成粮食浪费。稻谷干燥面临能耗大、品质保持协同调控两大难题。过热蒸汽作为一种现代干燥技术,其干燥能耗低,干后稻谷品质高,是协调干燥能耗与稻谷品质的有效途径之一。通过综合国内外学者在稻谷过热蒸汽干燥技术方面取得的成果,以期为今后稻谷高品质干燥提供依据。Rice is one of the main food crops in the world, which is the principal food for most areas and population in China.If the rice is not dried to safe moisture in time after harvest, moisture will produce mildew, resulting in food waste.Rice drying is faced with two problems: high energy consumption and coordinated control of quality maintenance.As a new drying technology, superheated steam has low drying energy consumption and high quality of dried rice, which is one of the effective ways to coordinate drying energy consumption and rice quality.This paper summarizes the achievements of domestic and foreign scholars in rice superheated steam drying technology, in order to provide the basis for the future high-quality drying of rice.
