摘 要:根据当前水稻品质育种和栽培的现状,对水稻品质进行了新的诠释。论述了加工品质和外观品质是基础、安全食用品质是前提、食味品质是关键、营养品质是根本的稻米品质关系,提出了今后水稻品质育种和优质化栽培的主攻方向,为全面提升稻米品质及其在国内外市场上的竞争力,满足人们日益增长的饮食文化需要提供理论指导。Based on the current situation of rice breeding and cultivation in grain quality, a new interpretation of rice quality was carried out. It is discussed on the rice quality relationship that processing quality and appearance quality are the foundation, safety eating quality is the prerequisite, eating quality is the key and nutrition quality is the fundamental.This article put forward the main direction of rice quality breeding and high quality cultivation in the future, providing a theoretical guidance for improving over-all rice quality and competitiveness in domestic and foreign markets to satisfy the people’s ever-growing demand for food culture.
