摘  要:USU型结构脂是人工合成的一种新型母乳替代脂,在脂肪酸组成与分布上与母乳脂肪相似,应用于婴幼儿配方奶粉中可防止婴儿便秘。该试验以棕榈硬脂油和芥菜籽油为原料,利用酶促酯交换反应制备USU型结构脂。研究了底物摩尔比(mol∶mol)、脂肪酶添加量和反应时间3个因素对结构脂得率的影响,通过正交试验对结构脂最佳制备条件进行了优化。结果表明:在脂肪酶添加量占底物质量4%,反应时间5 h,摩尔比为1∶4(mol∶mol)时,USU型结构脂得率最高,为86.69%。USU structured fat is a new type of artificially synthesized breast milk substitute fat.It is similar to breast milk fat in fatty acid composition and distribution.It can be used in infant formula milk powder to prevent infant constipation.In this experiment,palm stearin oil and mustard oil were used as raw materials to prepare USUtype structural lipids through enzymatic transesterification.The effects of three factors,the molar ratio of substrate,the additive amount of lipase and the reaction time on the yield of structural lipids were studied,and the optimal preparation conditions were optimized by orthogonal experiments.The results showed that when the lipase content accounted for 4%of the substrate mass,the reaction time was 5 h,and the molar ratio was 1∶4,the yield of USU structural lipid was the highest,86.69%.
