摘 要:为提高鸡卵黄膜中含硒蛋白的提取率,采用正交试验优化提取方法。将提取时间、提取温度和提取液浓度单因素实验结合正交试验,比较含硒蛋白提取率的变化,并确定最佳提取条件。结果发现,最佳提取条件为提取温度为30℃、NaCl浓度为0.15 mol/L、提取时间为11 h,在此条件下,含硒蛋白的提取率为36.52%,硒含量为0.97μg/L。优化后的方法可用于卵黄膜功能性产品开发。In order to improve the extraction rate of selenoprotein from chicken vitelline membrane,orthogonal design was used to optimize the extraction method.Extraction time,extraction temperature and extractant concentration were combined with orthogonal design to optimize the extraction process,the extraction ratio of selenoprotein was compared,and the optimal extraction conditions were determined.The optimal extraction conditions for selenoprotein were as follows:The extraction time was 11 h,the extraction temperature was 30℃,the concentration of NaCl was 0.15 mol/L.Under these conditions,the extraction rate was 36.52%.The optimized experimental technology can be used to the development of vitelline membrane functional products.
