菠萝片微波真空干燥特性及动力学模型研究

摘　　要：为获得高品质、低能耗菠萝干品,采用微波真空干燥箱对菠萝片进行干燥试验,研究其干燥特性及动力学模型,试验参数为微波功率(400、600、800、1000 W)、装载量(200、300、400 g),利用Weibull分布函数对试验数据进行拟合,并计算菠萝片微波真空干燥活化能。结果表明,Weibull分布函数能准确拟合不同试验参数下的干燥曲线;尺度参数在11.71541~27.04943 min,随着微波功率的增加而减小,随着装载量增加而增加;形状参数在1.30958~1.52725;水分有效扩散系数为1.97716×10^(-7)~4.68639×10^(-7) m^(2)/s,随着微波功率升高而增大;干燥活化能为2.09924 W/g。Weibull分布函数较好地预测菠萝片干燥过程中水分脱除规律,对果蔬等农产品干燥过程预测与工艺优化具有重要意义。In order to shorten the drying time and improve the quality,the drying characteristics and kinetic model of pineapple slice in microwave vacuum dryer were investigated at different microwave power(400,600,800,1000 W),loading(200,300,400 g).The Weibull distribution was used to fit the experimental data and activation energy of microwave vacuum drying of pineapple slices was calculated.The results showed that the Weibull distribution model could fit the drying curves accurately under different drying conditions.Scale parameter(α)decreased in the range 11.71541-27.04943 min with the increase of microwave power,and increase with the increase of loading.Shape parameter(β)ranged from 1.30958-1.52725.The effective moisture diffusivity coefficient(Deff)values was 1.97716×10^(-7)-4.68639×10^(-7) m^(2)/s with the increase of microwave power.The activation energy was 2.09924 W/g.The Weibull distribution function could predict the water migration law of the drying process of pineapple slice,it was of great significance for the prediction of the drying process of agricultural products and the process optimization.
