摘　　要：展青霉素是一种有毒的真菌代谢产物,普遍存在于腐烂的蔬菜、水果中,是对人类危害最大的真菌毒素之一。综述了苹果及其制品中展青霉素的研究进展,介绍了展青霉素产生菌、理化性质与毒性、污染现状、降解及检测方法等,为苹果及其制品中展青霉素的研究及防控提供参考。Patulin is a kind of toxic secondary metabolite produced by fungi which widely exists in rotten vegetables and fruits,and is one of the most harmful mycotoxins to human beings.In this paper,the research progress of patulin in apple and its products was reviewed.The producing fungi,physicochemical properties and toxicity,pollution status,degradation and detection methods were introduced to providing reference for the research and control of patulin in apple and its products.
