摘 要:β-谷甾醇属于四环三萜类化合物,是一种化学结构与哺乳动物胆固醇类似的植物类固醇,广泛存在于植物中,尤以谷物和油料作物中的含量为高。β-谷甾醇具有降胆固醇、降血糖、抗氧化、抗炎、抑菌和类激素功能等多种生物活性,已成为生命科学各领域特别是医学领域的研究热点。本文综述了β-谷甾醇的来源、理化特性、吸收代谢、生理功能及其在动物生产中的应用研究进展,旨在为β-谷甾醇在动物营养领域的开发和应用提供参考。β-sitosterol,belonging to tetracyclic triterpenoids,is a plant-derived steroid with a similar chemical structure to mammalian cholesterol and widely exists in plants,especially in cereals and oil crops.β-sitosterol has been shown to possess multiple biological activities,including the cholesterol-and glucose-lowering,antioxidant,anti-inflammatory,antimicrobial,and hormone-like effects,and it has been a research focus in many fields of life sciences especially medicine.This article mainly reviewed and summarized the sources,physical and chemical properties,absorption and metabolism,and physiological functions ofβ-sitosterol as well as its application in animal production,aiming at providing references for the development and application ofβ-sitosterol in animal nutrition.[Chinese Journal of Animal Nutrition,2022,34(5):2721-2731]
