摘　　要：【目的】检测蚕蛹中金属元素的含量,为科学评价蚕蛹营养性及安全性提供参考。【方法】选取52个不同品种家蚕蛹,采用 HNO;+HCLO;体系对蚕蛹进行微波消解,结合电感耦合等离子体光学发射光谱法(Inductively coupled plasma optical emission spectrometry,ICP-OES),测定蚕蛹中钙、铁、钾、镁、锌、镉、铬和铅8种金属元素的含量。参考《食品安全国家标准 食品中污染物限量》(GB 2762-2017)对52个不同品种 蚕 蛹 安 全 性 进 行 分 析。【结 果】家 蚕 蛹 中 常 量 金 属 元 素 钙、钾、镁 平 均 含 量 分 别 为 591.94μg/g、6 669.02μg/g和2 120.47μg/g;微量元素铁、锌平均含量分别为12.99μg/g、69.78μg/g;重金属元素铬、镉、铅含量极低,平均含量分别为0.03μg/g、0.33μg/g和0.15μg/g;家蚕蛹中的金属元素含量与其全龄经过、全茧量和蛹重等性状相关性微弱,不能作为家蚕地理品系的特征标记。钙-镁和镁-锌的富集呈显著相关,相关系数分别为0.861和0.832;其他元素之间富集存在微弱负相关关系。【结论】蚕蛹中含有较为丰富的常量元素和微量元素,重金属元素除 Cr平均含量(0.33μg/g)略高于国标(0.30μg/g)外其他元素含量符合 GB 2762—2017标准,建议选择性地作为安全性功能食品进行推广。【Objective】The content of metal elements in silkworm pupae is determined to provide a reference for scientifically evaluating nutrition and safety of silkworm pupae.【Method】The Ca,Fe,K,Mg,Zn,Cd,Cr and Pb content in pupae of 52silkworm varieties is determined by HNO;+HCLO;system and ICP-OES and the pupa safety of 52silkworm varieties is evaluated according to “State Criteria for Food Safety:Limits of Contaminants in Food”(GB2762-2017).【Result】The average content of Ca,K,Mg,Fe,Zn,Cr,Cd and pb in silkworm pupae is 591.94μg/g,6 669.02μg/g and 2 120.47μg/g,12.99μg/g,69.78μg/g,0.03μg/g,0.33μg/g and 0.15μg/g respectively.The content of metal elements in silkworm pupae is weakly related to duration of all instars,cocoon weight and pup weight,which expresses that the content of metal elements cannot be used as a feature symbol for silkworm geographic trains.There are the significant correlations in enrichment between Ca and Mg and between Mg and Zn.The enrichment coefficient of Ca-Mg and Mg-Zn is 0.861and 0.832separately.There is a weak negative correlation between other elements.【Conclusion】Silkworm pupae are rich in major and trace elements.The average Cr content(0.33μg/g)in silkworm pupae is slightly higher than the national standard(0.30μg/g)but the average Cd and Pb content in silkworm pupae accords with the standard of GB 2762-2017.The silkworm pupa should be selectively used as a safe functional food.
