摘  要:通过研究碱性蛋白酶等酶制剂和NaOH溶液复配等工艺优化减少化学清洗原料对设备耗损,降低化学残留物对乳制品的影响以及减少污水对环境的危害。结果表明,碱性蛋白酶和NaOH溶液按照恰当的复配方式将取得良好的降解效果。不同种类的酶制剂复配可能降低酶制剂的利用率。NaHCO_(3)和Na_(2)CO_(3)两种碱性盐与碱性蛋白酶复配能降解部分奶垢,分别达到NaOH溶液降解效果的62%和74%。研究结果为乳制品生产设备的清洗工艺改进与开发提供了依据。By studying the process optimization of enzyme preparations such as alkaline protease and NaOH solution,the equipment consumption of chemical cleaning raw materials is reduced.The impact of chemical residues on dairy products and the harm of sewage to the environment are also reduced.The results show that alkaline protease and NaOH solution will achieve good degradation effect according to the proper compounding method.The compounding of different kinds of enzyme preparations may reduce the utilization rate of enzyme preparations.Two alkaline salts of NaHCO3 and Na2CO3 compounded with alkaline protease can degrade part of the milk scale,which reaches 62%and 74%of the degradation effect of NaOH solution,respectively.The research results provide a basis for the improvement and development of the cleaning process of dairy production equipment.
