摘  要:选取“富凤土鸡3号”40日龄母鸡540羽,随机分为对照组(D组)和S1、S2、S3、S45个组,每组3个重复,每个重复36羽。对照组饲喂全价饲料,S1、S2组在全价饲料中分别添加3%、4%桂叶粉混合发酵制剂,S3、S4组在全价饲料中分别添加3%、4%桂皮粉混合发酵制剂。饲养期110 d,试验期结束后测定各组肉鸡生长性能、屠宰性能以及肉品质等指标。结果表明:(1)D组试验鸡的末重、平均日增重、日均采食量最高,分别为2126.67、14.43、55.07 g,高于其他试验组,料肉比和存活率分别为3.82、88.90%,显著低于其他试验组(P<0.05)。(2)D组腹脂率为5.38%,显著高于其他试验组(P<0.05),S4组胸肌率最高,为16.58%,S2组腿肌率最高,为23.70%。(3)D组饱和脂肪酸最高,为1.66%,S2组不饱和脂肪酸、油酸最高,分别为1.18%、1.13%,S4组亚油酸最高,为0.04%。(4)S4组胸肌和腿肌肉色Opto值分别为59.75、63.29,在所有组别中最高。(5)S1组氨基酸总量、鲜味氨基酸最高,而S2组EAA/TAA和EAA/NEAA比值分别为40.39%、67.35%,在所有组别中最高。综合看来,肉桂提取剩余物发酵制剂的加入稍微降低了试验鸡的生长性能,但其对鸡肉的腹脂率、胸肌率、腿肌率等屠宰指标,以及脂肪酸组成、风味、氨基酸营养等均有积极的影响。540 40 days old hens of of Fufeng native chicken No.3 were selected,randomly divided into five groups: control group D,group S1,group S2,group S3 and group S4. There were 3 replicates in each group,with 36 feathers per replicate.Group D was fed with full formula diet,group S1 was fed with full formula diet + 3% mixed fermentation preparation of cassia leaf powder,group S2 was fed with full formula diet + 4% mixed fermentation preparation of cassia leaf powder,group S3 was fed with full formula diet + 3%mixed fermentation preparation of cinnamon powder,group S4 was fed with full formula diet + 4% mixed fermentation preparation of cinnamon powder. The feeding period was 110 days,at the end of the experimental period,the growth performance,slaughter performance and meat quality of broilers in each group were measured. The experimental results showed that:(1) The final weight,average daily gain and average daily feed intake of group D were the highest,which were 2126.67,14.43 g and 55.07 g respectively,which were higher than other experimental groups. The feed meat ratio and survival rate were 3.82 and 88.90%respectively,which were significantly lower than other experimental groups(P < 0.05).(2) The abdominal fat rate of group D was 5.38%,which was significantly higher than that of other experimental groups(P < 0.05).The chest muscle rate of group S4 was the highest,and the leg muscle rate of group S2 was the highest,with16.58%.(3) Group D had the highest saturated fatty acid of 1.66%,group S2 had the highest unsaturated fatty acid and oleic acid of 1.18% and 1.13% respectively,and group S4 had the highest linoleic acid of 0.04%.(4)The Opto values of chest and leg muscles in S4 group were 59.75 and 63.29 respectively,which were the highest in all groups.(5) The total amino acids and delicious amino acids in S1 group were the highest,while the EAA/TAA and EAA/NEAA ratios in S2 group were 40.39% and 67.35% respectively,which were the highest in all groups.
