摘 要:在总结了食品包装用纸制品风险物质研究现状的基础上,以餐饮行业常见的纸餐具为研究对象,通过对重金属铅、砷、锑(Pb、As、Sb)、荧光性物质、邻苯二甲酸酯类(PAEs)、溶剂残留量、微生物限量、三氯甲烷提取物六种有害物质的检测结果,发现了纸餐具中影响人体健康的风险指标,并进行了风险研究,提出了食品包装纸餐具减少风险的质量保证措施和相关建议。Based on the food wrapping paper,risk material research status were summarized.The paper tableware commonly used in catering industry is taken as the research object,through the heavy metal lead,arsenic,antimony(Pb,As,Sb),fluorescent material,phthalic acid esters(PAEs),solvent residue,microbial limit,chloroform extracts of six kinds of harmful material test results.The risk index of paper dishware affecting human health was found,the risk research was carried out,and the quality assurance measures and related suggestions for reducing the risk of food wrapping dishware were put forward.
