摘 要:明胶膜因为其原料明胶为天然化合物,对食品、人体无毒副作用,广泛应用于食品、医药和化妆品等诸多领域,特别作为目前研究热点的医药领域。由纯明胶分子制备的纯明胶膜,质地较脆、力学性能不足,大大限制了其应用范围,所以需要对明胶膜进行交联改性,改善功能且拓宽应用。本文综述了明胶膜的包括化学交联和物理交联在内的不同交联方法及其交联原理,以及列举了近些年来的研究成果;在不同功能应用需求下,对明胶膜特殊化处理,以期实现抗菌性、提高机械性能、抗氧化性的理论框架和研究进展。gelatin film is widely used in food,medicine,cosmetics and many other fields,especially in the field of medicine,because its raw material gelatin is a natural compound,which has no toxic and side effects on food and human body.Due to the brittle texture and insufficient mechanical properties of pure gelatin film prepared by pure gelatin molecule,its application scope is greatly limited,so it is necessary to crosslink the gelatin film to improve its function and broaden its application.In this paper,the crosslinking principle of different crosslinking methods,including chemical crosslinking and physical crosslinking,and the research achievements in recent years are summarized.Under different functional application requirements,the theoretical framework and research progress of gelatin film special treatment are summarized in order to achieve antibacterial,improve mec hanical properties and antioxidant properties.
