摘  要:葡萄种子单宁是影响葡萄酒口感、风味和陈酿潜力的重要组分之一,而可溶性单宁和非可溶性单宁对葡萄酒品质有着不同的贡献。本文以酿酒葡萄品种‘赤霞珠’和‘西拉’及其杂交F1代90份种子为试材,探究可溶性单宁和非可溶性单宁含量的遗传趋势。结果表明,种子可溶性单宁和非可溶性单宁含量在杂交子代中基本呈正态分布,它们均有很高的广义遗传力;可溶性单宁含量呈现趋低遗传,而非可溶性单宁趋向高值遗传;可溶性和非可溶性单宁含量的变异系数均达20%以上,说明杂交后代的选择潜力均较大;研究也发现,非可溶性单宁占总单宁的比值受广义遗传力、超高亲率和遗传传递力均最大,且杂交子代中单宁高低占比相差4倍以上,表明这些子代之间单宁聚合能力存在较大差异,可为单宁缩合机理的研究和以改善种子单宁为目标的葡萄育种提供材料。Grape seed tannins are the important components in wines that determine the taste,flavor and aging potential of wine,while soluble tannins and insoluble tannins have different contributions to wine quality.In this study,the seeds of wine grape varieties’Cabernet Sauvignon’and’Syrah’and their 90 F1 hybrid offspring were used as experimental materials to explore the genetic trend of soluble and insoluble tannins.The results showed that the contents of soluble and insoluble tannins both presented overall normal distribution in the seeds of hybrid offspring and they had high broad sense heritability.Moreover,the content of soluble tannins tended to lowering inherence,while the insoluble condensed tannins exhibited a tendency of high value inherence.The coefficient of variation of seed tannins was more than 20%,indicating that both soluble and insoluble tannins had large selection potential in hybrid offspring.In particular,the ratio of insoluble tannins to total displayed a strong inherence effect based on the highest value of broad sense heritability,ultra-high parental proportion,and genetic transmissibility.There was more than 4-fold difference in the ratio between the F1 hybrid individuals with relatively high and low value,suggesting that there were great differences in tannin polymerization ability between these offspring,which could be used as research materials to explore tannin condensation mechanism and carried out grape breeding aimed at improving seed tannins.
