摘  要:本试验旨在探究青贮燕麦和发酵杂交构树对肉牛生长性能、血清生化指标、肉品质及肌肉组织学特性的影响。选取15头健康、体重420 kg左右的西门塔尔牛与秦川牛杂交F1代公牛,随机分为3组,每组5头。3组精饲料相同,对照组粗饲料为100%日常饲草(80%青贮玉米+20%麦秸),青贮燕麦组粗饲料为80%日常饲草+20%青贮燕麦,发酵杂交构树组粗饲料为80%日常饲草+20%发酵杂交构树。预试期为7 d,正试期为90 d。结果表明:1)各组之间末重、全期总增重、平均日增重差异不显著(P>0.05)。2)青贮燕麦组血清葡萄糖、甘油三酯含量显著高于对照组(P<0.05),血清尿素氮、总胆固醇含量显著低于对照组(P<0.05)。发酵杂交构树组血清总蛋白、球蛋白、甘油三酯含量显著高于对照组(P<0.05),血清尿素氮、葡萄糖、总胆固醇、高密度脂蛋白胆固醇含量和白蛋白/球蛋白显著低于对照组(P<0.05)。3)青贮燕麦组肌肉滴水损失、失水率、剪切力、亮度值、pH(45 min)显著低于对照组(P<0.05),肌肉pH(24 h)显著高于对照组(P<0.05)。发酵杂交构树组肌肉亮度、红度、黄度值显著低于对照组(P<0.05),肌肉pH(24 h)显著高于对照组(P<0.05)。4)青贮燕麦组和发酵杂交构树组肌纤维横截面积显著低于对照组(P<0.05),肌纤维密度显著高于对照组(P<0.05)。综上所述,饲粮中添加青贮燕麦和发酵杂交构树能提高肉牛免疫性能,改善肉品质。This experiment was conducted to investigate the effects of oat silage and fermented hybrid Broussonetia papyrifera on growth performance,serum biochemical indices,meat quality and muscle histological characteristics of cattle.Fifteen healthy F1 bulls of Simmental and Qinchuan cattle weighing about 420 kg were randomly divided into 3 groups with 5 bulls in each group.The three groups fed the same concentrate feed,the control group was fed with 100%daily forage(80%corn silage+20%wheat straw),the oat silage group was fed with 80%daily forage+20%oat silage,and the fermented hybrid Broussonetia papyrifera group was fed with 80%daily forage+20%fermented hybrid Broussonetia papyrifera.The pre-trial period lasted for 7 days,and the trial period lasted for 90 days.The results showed as follows:1)there were no significant differences in final weight,total weight gain during whole period and average daily gain among all groups(P<0.05).2)The contents of glucose and triglyceride in serum of oat silage group were significantly higher than those of the control group(P<0.05),and the contents of urea nitrogen and total cholesterol in serum were significantly lower than those of the control group(P<0.05).The contents of total protein,globulin and triglyceride in serum of fermented hybrid Broussonetia papyrifera group were significantly higher than those of the control group(P<0.05),and the contents of urea nitrogen,glucose,total cholesterol,high density lipoprotein cholesterol and albumin/globulin in serum were significantly lower than those of the control group(P<0.05).3)The muscle drip loss,water loss rate,shear force,brightness value,pH(45 min)of oat silage group were significantly lower than those of the control group(P<0.05),and the muscle pH(24 h)was significantly higher than that of the control group(P<0.05).The muscle brightness,redness and yellowness of fermented hybrid Broussonetia papyrifera group were significantly lower than those of the control group(P<0.05),and the muscle pH(24 h)was significantly higher than that
