摘  要:大豆凝集素(soybean agglutinin, SBA)是大豆中主要的抗营养因子,约占成熟大豆蛋白的10%。SBA可与小肠上皮细胞发生特异性结合,产生抗营养作用,阻碍动物营养吸收,降低动物生产性能,引起动物肠道疾病。随着对SBA的不断研究,SBA对上皮细胞的形态、细胞增殖、凋亡、自噬以及信号传导途径的影响有了一些新的发现。本研究对SBA的理化性质和生物学功能进行了简述,着重论述SBA对动物肠道的组织结构和肠上皮细胞生物学功能的影响,并重点从细胞生物学、分子生物学和蛋白质组学等角度揭示SBA的抗营养机制,为降低或阻断SBA的抗营养作用,以及饲料加工技术的优化和生物医药产品的研发具有重要意义。Soybean agglutinin(SBA) is the main anti-nutritional factor in soybean,accounting for about 10% of mature soybean protein.SBA can specifically bind to small intestinal epithelial cells,produce anti-nutritional effects,hinder nutrient absorption of animals,reduce animal performance,and cause intestinal diseases.With the continuous research,some new discoveries have been made on the effects of SBA on the morphology,cell proliferation,apoptosis,autophagy and signal transduction pathways of epithelial cells.In this paper,the physicochemical properties and biological functions of SBA were briefly reviewed,and the effects of SBA on the intestinal tissue structure and the biological functions of intestinal epithelial cells were emphatic discussed.The anti-nutritional mechanism of SBA was revealed from the perspectives of cell biology,molecular biology and proteomics.In order to reduce or block the anti-nutritional effects of SBA,the optimization of feed processing technology and the research and development of biomedical products are of great significance.
