摘  要:【目的】探讨骏枣裂果相关因子,为研究骏枣裂果机理及其防控措施提供理论参考。【方法】以骏枣为试验材料,对脆熟期骏枣进行人工浸水处理诱导裂果,研究开裂时间不同的果实裂果特征参数、生物量特征参数、可溶性固形物含量、果实表面色差及养分含量的差异性,并作相关性分析。【结果】果实人工浸水处理,浸水处理前期(≤32 h)骏枣裂果率较高而平稳,裂果率均大于5%,之后呈现逐渐下降的趋势,浸水处理112 h后,骏枣累积裂果率达47%。不同时间段开裂的单果干质量之间均无显著差异,但随着开裂时间的延长,枣果干物质积累率逐渐减少。随着骏枣浸水开裂时间的延长,果实可溶性固形物含量呈现出逐渐下降趋势,各时间段之间也存在显著差异,8 h和16 h的果实可溶性固形物含量最高,分别为13.582%±0.256%和13.643%±0.121%,比对照分别高6.892%和6.953%。骏枣脆熟期果实表面色差值L^(*)在-58.47±1.86至-48.13±7.91范围内,色差值a^(*)在14.58±2.87至20.23±0.70范围内,色差值b^(*)在18.87±2.12至31.13±0.94范围内,各浸水裂果时间段的L^(*)值与对照相比均无显著差异,a^(*)和b^(*)值均随着开裂时间的延长呈现降低趋势。随着骏枣浸水处理时间的延长,其果实N、Ca和Mn含量呈现出逐渐增多趋势,P、K和Fe含量表现缓慢减少趋势,Mg、Cu和Zn含量均表现不规律的变化趋势。相关性分析结果表明,骏枣裂果率与干物质积累率、可溶性固形物含量、果实表面色差值a^(*)和b^(*),果实养分P、K和Fe含量之间呈现正相关性,其中与干物质积累率、可溶性固形物含量和果实表面色差值b^(*)之间的相关系数(R)均大于0.9;与果实表面色差值L^(*)及N、Ca和Mn含量之间呈负相关性,其中与Ca含量之间的相关系数最大,R值为-0.974。【结论】骏枣果实中较高的干物质积累率和可溶性固形物含量会降低果实水势,是导致果实吸水�【Objective】The work was conducted to explore the factors related to Jun-jujube fruit cracking,to provide theoretical references for the study of the mechanism of Jun-jujube fruit cracking and its prevention and control measures.【Method】Taking Junjujube as the experimental object,the differences in fruit cracking characteristic parameters,biomass parameters,soluble solid content,fruit surface color difference characteristic parameters and nutrient content among the treatments with different cracking time were studied,and then the correlation analysis was conducted.【Result】Under the water immersion treatment,the cracking rate of Junjujube was high and stable in the early stage(≤32 h),and the cracking rate was more than 5%,which gradually decreased afterwards.When the immersion time reached 112 h,the cumulative cracking rate of Jun-jujube reached 47%.There was no significant difference in the dry weight of the cracked single fruit at different cracking time,but the dry matter accumulation rate of Jun-jujube fruit decreased with the extension of cracking time.The soluble solid content of Jun-jujube fruit gradually decreased with the extension of soaking time,and there were significant differences in the soluble solid content among different cracking time.The fruits after an 8 h and 16 h cracking treatment had the highest soluble solid content,which was 13.582±0.256%and 13.643±0.121%,respectively,exhibiting 6.892%and 6.953%higher than that of control.At the crisp and ripe stage,when the fruit surface color difference value L^(*)of Jun-jujube was in the range of-58.47±1.86 to-48.13±7.91,the L^(*)value showed no significant changes with cracking time,while the color difference values a^(*)and b^(*)were decreased with the extension of cracking time when a^(*)was in the range of 20.23±0.70 to 14.58±2.87,and b^(*)was in the range of 31.13±0.94 to 18.87±2.12.With the extension of immersion time,the contents of N,Ca and Mn increased gradually,while the contents of P,K and Fe decreased slowly,and the con
