摘 要:采用响应面方法对制备冷水可溶羟丙基淀粉的条件进行了优化。通过Plackett-Burman设计筛选了制备冷水可溶羟丙基淀粉的条件,同时采用Box-Behnken设计进行了优化。结果表明:环氧丙烷用量、醚化温度、乙醇浓度和加碱量4个因素能够显著影响羟丙基含量,Box-Behnken设计预测模型显著(P<0.05),失拟项不显著(P>0.05)。用该模型预测得到的羟丙基含量为15.39%,最佳反应条件为环氧丙烷添加量19%、醚化温度43℃、乙醇浓度55%、加碱量1.8%。在最优条件下制备的羟丙基淀粉透明度、冻融稳定性、抗老化性好,用于果冻胶中,能赋予产品良好的透明度、韧性、黏结力,为果冻胶提供了新原料。Response surface methodology is used to optimize the reaction conditions for water soluble hydroxypropyl starch preparation.Plackett-Burman design is used to select reaction conditions for water soluble hydroxypropyl starch preparation,and the significant factors are optimized by Box-Behnken design.The results show that amount of propylene oxide dosage,etherification temperature,ethanol concentration and alkali addition can significantly affect the content of hydroxypropyl.The Box-Behnken model of design is significant(P<0.05),and lack of fit is no significant(P>0.05).The predicted content of the hydroxypropoxy group is 15.39%,and the predicted conditions are amount of propylene oxide 19%,etherification temperature is 43℃,ethanol concentration is 55%,amount of alkali addition is 1.8%.Properties of luminosity,the freeze thaw stability and inhibit retrogradation of hydroxypropyl starch are good under the optimal conditions.It is used in jelly,can give the product good transparency,toughness,adhesion,it provides a new raw material for jelly.
