摘  要:测定了洪江雪峰乌骨鸡胸肌常规营养成分、氨基酸、脂肪酸和微量元素含量,并对其营养价值进行分析评定.结果表明:洪江雪峰乌骨鸡胸肌粗蛋白、粗脂肪含量分别为25.24%、1.45%.胸肌中共检测到17种氨基酸,必需氨基酸占总氨基酸和非必需氨基酸的比例分别为39.75%、80.61%,符合FAO/WHO理想模型.鲜味氨基酸占总氨基酸的比例为37.89%.洪江雪峰乌骨鸡胸肌饱和脂肪酸、单不饱和脂肪酸、多不饱和脂肪酸比例近似1∶1∶1,必需脂肪酸占总脂肪酸的比例高达24.74%.洪江雪峰乌骨鸡胸肌粗脂肪含量母鸡显著高于公鸡(P<0.05),胸肌氨基酸组成无性别差异,脂肪酸营养价值母鸡高于公鸡.胸肌中铁、锌含量公鸡显著高于母鸡(P<0.05),而硒含量母鸡显著高于公鸡(P<0.05).因此,洪江雪峰乌骨鸡胸肉是一种味道鲜美、营养价值高的滋补食品.性别对洪江雪峰乌骨鸡胸肌营养成分有一定影响.The contents of proximate nutrients,amino acids,fatty acids and trace elements in the breast meat of Hongjiang Xuefeng black bone chicken were determined,and its nutritional value were evaluated.The results showed that the contents of crude protein and crude fat in the breast meat of Hongjiang Xuefeng black bone chicken were 25.24%and 1.45%,respectively.Among all seventeen amino acids,the ratios of essential amino acids to total amino acids and non-essential amino acids wer 39.75%and 80.61%,respectively,which were in accordance with the amino acids standards by FAO/WHO.Umami amino acids accounted for 37.89%of total amino acids of the breast meat.The fatty acids ratio of saturated fatty acids,monounsaturated fatty acids,and polyunsaturated fatty acids in the breast meat was approximately 1:1:1.And the percentage of essential fatty acids to total fatty acids was 24.74%.The crude fat content in the breast meat of females was significantly higher than that of males(P<0.05).There was no gender difference in amino acid composition of the breast meat.The nutritional value of faty acids in females was higher than that in males.The contents of iron and zinc in the breast meat of males were significantly higher than that in females(P<0.05),whereas the content of selenium in females was significantly higher than that in males(P<0.05).Therefore,the breast meat of Hongjiang Xuefeng black bone chicken is a tonic food with delicious taste and high nutritional value.Gender has a significant effect on the nutritional composition in the breast meat of Hongjiang Xuefeng black bone chicken.
