摘  要:将发酵后的芒果皮以不同比例添加到相同配方的日粮中饲喂38日龄至130日龄鸿光黑鸡,分别检测肉鸡的生长性能、屠宰性能、血清生化指标、肉品质、肌肉中氨基酸这5项指标。结果显示:试验组和对照组的平均日增重、平均采食量和料肉比无显著差异(P> 0.05);试验1、2组鸡群的死亡率较对照组明显降低,分别降低16.67%、33.33%;试验1、2组腹脂率较对照组提高56.3%、64.26%(P <0.05),差异显著;试验1、2组免疫球蛋白较对照组升高,分别提高20.83%、18.75%;小肠绒毛发育优于对照组;试验1、2组的不饱和脂肪酸含量高于对照组,分别提高16.67%、113.89%,差异显著(P <0.05),其中试验2组的油酸含量达到1.36 g/100 g,试验1、2组油酸较对照组分别提高21.21%、106.06%,差异显著(P <0.05);试验2组的亚油酸是对照组的3倍,试验1、2组亚油酸较对照组分别提高66.67%、200%,差异显著(P <0.05)。研究结果表明,肉鸡日粮中添加发酵芒果皮对生长性能影响不显著;对提高抗病力、降低死亡率,以及改善肉质风味具有较明显的效果。Fermented mango peel was added into the same diet in different proportions to feed Hongguang black chickens aged from 38 days to 130 days,and the growth performance,slaughter performance,serum biochemical index,meat quality,and amino acids in the muscle of the broiler are detected respectively.After analysis and comparison,there were no significant differences in average daily gain,average feed intake and feed to meat ratio between the experimental group and control group(P > 0.05).Compared with the control group,the mortality of groups 1 and 2 was decreased by 16.67% and 33.33%,respectively.Compared with the control group,the abdominal fat percentage in experimental groups 1 and 2 was significantly increased by 56.3% and 64.26%(P < 0.05).Compared with the control group,immunoglobulin in test groups 1 and 2 was increased by 20.83% and 18.75%,respectively.The development of small intestinal villi was better than the control group.The content of unsaturated fatty acids in test groups 1 and 2 was higher than that in control group,increasing by 16.67% and 113.89%,respectively,with significant differences(P < 0.05).The oleic acid content in test group 2 was 1.36 g/100 g,and the oleic acid content in test groups 1 and 2 was increased by 21.21% and 106.06%,respectively,compared with control group,with significant differences(P < 0.05).The linoleic acid in test group 2 was 3 times that in control group,and the linoleic acid in test groups 1 and 2 was increased by 66.67% and 200% compared with control group,respectively,with significant differences(P < 0.05).The results showed that adding fermented mango peel in broiler diet had no significant effect on growth performance.But had obvious effect on improving disease resistance,reducing mortality and improving meat flavor.
