摘 要:为了解不同粒色及皮壳特性大麦品种(系)的籽粒矿质元素、总黄酮、粗蛋白含量(质量分数,下同)等品质指标的差异,本文对20个相关典型大麦种质中的8种主要矿质元素及总黄酮、蛋白质含量进行了测定。结果表明:同一大麦品种(系)中籽粒各元素含量存在明显差异,P元素含量最高,为2 401.52~4 638.43 mg/kg;Se元素含量最低,为4.15~30.68μg/kg。皮大麦籽粒中Mn、Cu、Zn元素总含量显著高于裸大麦,但有色大麦与普通大麦之间无差异。ZDM10347的籽粒Fe含量高达97.26 mg/kg,具有富集Fe的潜力;ZDM10360和ZDM10390的Zn含量分别为42.25、44.38 mg/kg,达到富锌谷物锌含量标准。供试大麦粗蛋白含量范围为11.97%~25.31%,ZDM1648和ZDM10342的粗蛋白含量较高,均超过了20%;总黄酮含量为1.12~1.30 mg/g,处于中等水平。This study was aimed to determine the differences of 20 hulled or hulless barley varieties(lines) with different grain colors in mineral element contents, total flavonoid content, and crude protein content in grains. The tested barley germplasm consisted of six hulled and 14 hulless barley varieties(lines), whose grain quality was assessed by determining the contents of eight main mineral elements, total flavonoids, and proteins. The results showed that the contents of the eight mineral elements varied significantly in grains of each barley variety. P content and selenium content stood at 2 401.52~4 638.43 mg/kg and 4.15~30.68 μg/kg, respectively, being the highest and the lowest, respectively, among the tested mineral element contents. Mn, Cu, and Zn contents were significantly higher in hulled barley grains than in hulless barley grains;however, these parameters had no significant difference between colored barley and ordinary barley. This study also found that the variety ZDM10347 had a high grain iron content of 97.26 mg/kg, revealing its potential for enriching iron. On the other hand, ZDM10360 and ZDM10390 had the zinc contents of 42.25 and 44.38 mg/kg,respectively, reaching the zinc-rich standard of grains. Furthermore, the crude protein contents in the tested barley varieties(lines)ranged from 11.97% to 25.31%;especially, the varieties ZDM1648 and ZDM10342 had the crude protein contents higher than 20%;and their total flavonoid contents ranged from 1.12 to 1.30 mg/kg. This study lays a foundation for production of barley enriched with mineral elements.
