摘  要:为了研究发酵玉米秸秆和全株玉米青贮对生长期霍杂肉鹅屠宰性能及肉品质的影响,试验选择40日龄体重相近的健康霍杂肉鹅150只(公母比为1∶1),随机分为5组,分别为对照组及试验Ⅰ、Ⅱ、Ⅲ、Ⅳ组,每组3个重复,每个重复10只。对照组饲喂基础日粮,试验Ⅰ、Ⅱ、Ⅲ、Ⅳ组分别饲喂80%基础日粮+20%发酵玉米秸秆、70%基础日粮+30%发酵玉米秸秆、80%基础日粮+20%全株玉米青贮、70%基础日粮+30%全株玉米青贮,试验期30 d,测定屠宰性能(屠宰率、半净膛率、全净膛率、胸肌率和腹脂率等)、器官指数(心脏、肝脏、腺胃和肌胃)、肠道发育指标(十二指肠、空肠、回肠、直肠和盲肠的相对长度等)、肉品质指标(胸肌肉色、胸肌pH值等)。结果表明:试验Ⅲ组全净膛率与对照组和试验Ⅱ组相比分别提高了5.0%和5.5%,差异显著(P<0.05),其他各试验组的屠宰性能指标与对照组相比均差异不显著(P>0.05)。与对照组相比,试验Ⅲ组肌胃指数、空肠和盲肠的相对长度均显著提高(P<0.05),其他各试验组与对照组相比器官指数及肠道相对长度均差异不显著(P>0.05)。试验Ⅰ组、Ⅱ组的滴水损失显著低于对照组(P<0.05),各试验组肉品质其他指标与对照组相比无显著差异(P>0.05)。说明在肉鹅日粮中添加20%全株玉米青贮能够提高霍杂肉鹅的屠宰性能,以及改善肉品质,因此建议在肉鹅日粮中添加20%全株玉米青贮。In order to study the effects of fermented corn stalks and whole-plant silage corn on slaughter performance and meat quality of Huoza meat geese during growing period,a total of 15040-day-old healthy Huoza geese(male-to-female ratio 1∶1)with similar body weight were selected and randomly divided into 5 treatment groups with 3 replicates in each group and 10 geese in each replicate:control group and experimental groupsⅠ,Ⅱ,Ⅲ,andⅣ.The geese in the control group were fed with a basal diet.The geese in the experiment groupsⅠ,Ⅱ,Ⅲ,andⅣwere fed with 80%basal ration+20%fermented corn stalk,70%basal ration+30%fermented corn stalk,80%basal ration+20%whole plant silage corn,70%basic diet+30%whole plant silage corn,respectively.The test period lasted for 30 days.Slaughter traits(slaughter rate,half evisceration rate,full evisceration rate,chest muscle rate and abdominal fat,etc.),organ indexes(weight of heart,liver,glandular stomach,gizzard,etc.),intestinal development indexes(length of duodenum,jejunum,ileum,rectum and cecum,etc.),and meat quality indexes(color and pH value of the pectoral muscle,etc.)were determined.The results showed that compared with the control group and the experimental groupⅡ,the total evisceration rate in the experimental groupⅢincreased by 5.0%and 5.5%(P<0.05),and the slaughter performance indexes had no difference in the other experimental groups compared with the control group(P>0.05).Compared with the control group,the musculo-gastric organ indexes and the relative length of the jejunum and the cecum in the experimental groupⅢwere significantly increased(P<0.05),while organ indexes and relative length of intestine in other experimental groups were not significantly different from that in control group(P>0.05).The drip loss in the experimental groupⅠandⅡwas significantly lower than that in the control group(P<0.05).There was no significant difference between experientmental groups and the control group in meat quality traits(P>0.05).The results indicated that adding 20%
