摘 要:以乙二醇为溶剂,碳酸钾为催化剂,海藻糖和硬脂酸乙酯为原料合成了海藻糖脂肪酸酯,通过IR和~1H NMR对产物进行了结构鉴定,分析了产物的亲水亲油平衡值。实验结果表明:较佳合成工艺条件为n(海藻糖)∶n(硬脂酸乙酯)=1.5∶1、反应温度100℃、反应时间5 h、碳酸钾用量1.5%,产率72.5%,纯度93.8%(HPLC);合成的海藻糖脂肪酸酯的HLB值为15.36,其发泡性大于33%;在质量浓度0.1~0.5 g/L时,其乳化性大于38.77%,乳化稳定性大于45.44%。The synthesis methods of trehalose lipids was introduced from trehalose and ethyl stearate,potassium carbonate as catalyst and ethylene glycol as solvents.The structure of the product was identified by IR and~1H NMR,and the hydrophilic lipophilic equilibrium value of the product was analyzed.The optimum synthetic reaction conditions for trehalose lipids were as follows:mole ratio of trehalose and fatty acid ethyl ester 1.5∶1,reaction temperature 100℃and reaction time 5 h.The ester yield of the product was 72.5%and the purity of the product is over 93.8%.It is found that the HLB value of the trehalose fatty acid ester synthesized in this study is 15.36,and its foaming property is more than 33%.Within the mass concentration of 0.1-0.5 g/L,its emulsifying property is greater than 38.77%and its emulsifying stability is greater than 45.44%.
