摘 要:随着人民生活水平的日益提高,对乳制品的需求也越来越多,乳制品现已成为人们日常生活不可缺少的食品。如何保证乳制品的质量安全,给广大人民群众提供优质的乳制品,也已成为广大乳制品工作者不断奋斗的目标。随着科技的不断进步,越来越多的新技术已引入到乳制品的生产加工中,最近几年很多新建造的乳品厂已采用智能化生产模式,特别是在生产加工过程中引入MES系统的使用,大大提高了生产效率及产品的质量稳定性和安全性,对乳制品的溯源更是一个不可缺少的部分。本文通过对MES系统在液态乳生产中的应用介绍,进一步说明了MES系统对乳制品质量提升及溯源环节的重要作用。With the increasing improvement of people’s living standards,the demand for dairy products is also increasing. Dairy products have become an indispensable food in people’s daily life. How to ensure the quality and safety of dairy products and provide high-quality dairy products to the masses has also become the goal of dairy workers. With the continuous progress of science and technology,more and more new technologies have been introduced into the production and processing of dairy products. In recent years,many newly built dairy plants have adopted the intelligent production mode,especially the use of MES system in the production and processing process,which has greatly improved the production efficiency,product quality stability and safety,and is an indispensable part of the traceability of dairy products. This paper introduced the application of MES system in liquid dairy production,and further explained the important role of MES system in the quality improvement and traceability of dairy products.
