摘　　要：为开展动物源性食品中全氟烷基类物质的残留水平调查,建立了乙腈萃取石墨化碳黑净化结合高效液相色谱串联质谱检测鸡蛋中17种以上PFCs的分析方法,并对2013–2018年采自我国30个省、直辖市的5987份鸡蛋样品进行了检测,获得PFPeA、PFHxA、PFHpA、PFOA、PFNA、PFDA、PFUdA、PFDoA、PFTrDA、PFTeDA、PFHxDA、PFBS、PFHxS、PFHpS、PFOS、PFDS、PFDoS共17种PFCs检测结果101779个。其中,557个检出结果≥LOQ(定量限0.5μg·kg-1),约占0.5%,主要为PFOS、PFPeA和PFOA,其平均含量分别为0.128μg·kg-1、0.0911μg·kg-1、0.0599μg·kg-1。经检测,全国鸡蛋中PFCs平均值为0.54μg·kg-1。本数据集的建设对我国鸡蛋中残留全氟烷基类物质数据资源的收集、利用和再开发具有重要意义,可为进一步完善养殖管理,加强食品安全监督的现状分析和趋势研究提供数据基础。In order to test the residue level of perfluoroalkyl substances in animal derived foods,we adopted an analytical method to test more than 17 PFCs in eggs by means of acetonitrile extraction graphitized carbon black purification combined with high performance liquid chromatography tandem mass spectrometry.We tested the 5,987 egg samples collected from 30 provinces and municipalities directly under the central government from 2013 to 2018,and obtained 101,779 detection results of 17 PFCs,namely PFPeA,PFHxA,PFHpA,PFOA,PFNA,PFDA,PFUdA,PFDoA,PFTrDA,PFTeDA,PFHxDA,PFBS,PFHxS,PFHpS,PFOS,PFDS,PFDoS.Among them,557 test results were≥LOQ(0.5μg·kg^(-1)),accounting for about 0.5%,mainly including PFOS,PFPeA and PFOA with the average contents of 0.128μg·kg^(-1),0.0911μg·kg^(-1) and 0.0599μg·kg^(-1),respectively.After testing,the national average PFCs in eggs is 0.54μg·kg^(-1).This dataset is of great significance for the collection,utilization and re-development of data resources of residual perfluoroalkyl compounds in eggs in China,and can provide data basis for further improving breeding management and strengthening the analysis and trend research of food safety supervision.
