摘 要:【目的】探明乳酸片球菌和粪肠球菌对金荞麦和串叶松香草青贮品质的影响,为开发金荞麦和串叶松香草青贮的发酵菌剂提供参考。【方法】采用单因素试验设计,以添加等量糖蜜为对照(CK),研究添加乳酸片球菌1×10^(11)CFU/g(T_(1))和添加粪肠球菌1×10^(11)CFU/g(T_(2))对金荞麦和串叶松香草感官品质、营养成分和发酵品质的影响。【结果】2种乳酸菌对金荞麦和串叶松香草青贮品质的影响存在差异,与CK相比,添加乳酸片球菌的金荞麦感官品质、营养成分和发酵品质较优,具有较高的感官评分(17分)、粗脂肪(5.23%)和乳酸含量(135.21 mg/g),较低的pH(3.69)和NH_(3)-N含量(0.31 g/kg),有利于提高其青贮品质;2种乳酸菌对串叶松香草的青贮品质均无明显改善作用。【结论】添加乳酸片球菌1×10^(11)CFU/g能有效提高金荞麦的青贮品质;添加乳酸片球菌1×10^(11)CFU/g和粪肠球菌1×10^(11)CFU/g对串叶松香草的青贮品质均无明显改善作用。【Objective】The effects of Pediococcus acidilactici and Enterococcus faecalis on the silage quality of Fagopyrum dibotrys and Silphium perfoliatum are studied to provide reference for the research and development of silage starter of F.dibotrys and S.perfoliatum.【Method】Single factor experimental design was adopted,the effects of adding P.acidilactici 1×10^(11)CFU/g(T_(1))and E.faecalis 1×10^(11)CFU/g(T_(2))on the sensory quality,nutritional components and fermentation quality of F.dibotrys and S.perfoliatum were studied as compared with the same amount of molasses(CK).【Result】Two kinds of lactic acid bacteria have different effects on silage quality of F.dibotrys and S.perfoliatum.Compared with CK,the sensory quality,nutritional components and fermentation quality of F.dibotrys added with P.acidilactici are better,with higher sensory score(17 points),crude fat(5.23%)and lactic acid content(135.21 mg/g),lower pH value(3.69)and NH_(3)-N content(0.31 g/kg),which is beneficial to improve silage quality.Two kinds of lactic acid bacteria have little improvement effects on the silage quality of S.perfoliatum【Conclusion】Adding 1×10^(11)CFU/g P.acidilactici can effectively improve the silage quality of F.dibotrys.Adding 1×10^(11)CFU/g pediococcus lactis and 1×10^(11)CFU/g E.faecalis had no obvious effect on the silage quality of S.perfoliatum.
