摘 要:以火麻仁籽饼为原料,采用碱液溶解法提取火麻仁蛋白质。研究料液比、浸提温度、浸提时间、浸提pH值对火麻仁蛋白提取率的影响,并在此基础上进行正交实验对火麻仁蛋白的提取工艺进行了优化。结果表明,火麻仁蛋白提取的最佳工艺条件是:料液比1∶11(g/mL),浸提温度60℃,浸提时间120 min,pH10,在该条件下火麻仁蛋白的提取率可高达28.63%。Hemp seed cake was used as raw material to extract hemp seed protein by alkaline solution.The effects of solid-liquid ratio,extraction temperature,extraction time and pH on the extraction rate of hemp seed protein was studied.Based on this orthogonal experiment was carried out to optimize the extraction process of hemp seed protein.The optimum process conditions of hemp seed protein were determined as follows:solid-liquid ratio was 1∶11(g/mL),extraction temperature 60℃,extraction time 120 min,pH 10,under which the protein extraction rate can reach 28.63%.
