摘  要:南京茶文化历史悠久。三国两晋南北朝时期,饮茶风习在南京兴起,以茶代酒、以茶待客、以茶示俭、以茶示廉、以茶为祭、以茶为赐等礼仪不断出现,茶在人们生活中的地位渐趋重要。唐宋时期是中国茶文化的兴盛繁荣时期,唐代中期,以栖霞山为中心,南京地区出现了早期的茶园、茶馆、山茶种植。明清时期,南京城市茶馆遍布大街小巷,茶叶种植加工技术不断进步。在晚清中国茶业日益衰败的背景下,为挽救中国茶业,南京开时代风气之先,建立江南植茶公所,附设茶务讲习所,进行茶业试验,开展茶业教育,在当时对振兴中国茶业、发展茶文化均有积极意义。Nanjing tea culture has a long history.During the Three Kingdoms,Jin,Southern and Northern Dynasties,the custom of drinking tea rose in Nanjing.Etiquettes such as replacing wine with tea,entertaining guests with tea,showing frugality with tea,showing honesty with tea,offering tea as a sacrifice,and giving tea as a gift continued to appear.Tea has become increasingly important in people's lives.The Tang and Song dynasties were the prosperous period of Chinese tea culture.In the middle of the Tang Dynasty,with Qixia Mountain as the center,early tea gardens,tea houses and Camellia planting appeared in Nanjing.During the Ming and Qing Dynasties,tea houses in Nanjing were all over the streets,and tea planting and processing technology continued to improve.Under the background of the declining Chinese tea industry in the late Qing Dynasty,in order to save the Chinese tea industry,Nanjing set up the Jiangnan tea planting office,attached to the tea workshop,carried out tea industry experiments and tea industry education,which was of positive significance to the revitalization of Chinese tea industry and the development of tea culture at that time.
