摘　　要：蛋白质是动物生长的营养物质基础,是饲料的主要营养成分。近年来动物蛋白资源紧缺,开发利用植物蛋白资源成为动物营养学研究的热点。但一些植物蛋白存在过敏原,直接影响了植物蛋白的质量和营养特性,存在潜在的应用风险因素。如何安全有效利用植物蛋白资源,文章对主要植物蛋白种类与来源、加工方法和营养特性进行了梳理,从植物蛋白过敏原的主要种类、致敏作用、抗原表位及影响因素、降低过敏原致敏性的途径等方面进行了整理和分析,以期为植物蛋白资源的开发与利用提供参考和依据。Protein is the nutritional basis for animal growth and the main nutritional components of feed.In recent years,there is a shortage of animal protein resources,and the development and utilization of plant protein resources has become a hot spot in animal nutrition researches.However,there are certain allergens in some plant proteins,which directly affect the quality and nutritional properties of plant proteins,and produce potential application risk factors.How to make full and effective use of plant protein resources,the main plant protein types and sources,processing methods and nutritional properties were combed.The progress of plant protein allergens focused on main types,allergic actions,epitopes and influencing factors,desensitization methods and so on were collated and analyzed,in order to provide references and basis for the development and utilization of plant protein resources.
