摘  要:黔南茶园种植面积170万亩,茶叶总产量4.48万吨,茶叶总产值67.3亿元,综合产值严重偏低。为了丰富都匀毛尖茶叶品系,提高茶叶综合产值,以都匀毛尖茶、高粱酒为主要原料配制绿茶酒。在单因素实验的基础上进行配制型都匀毛尖茶酒的正交优化试验,得出最佳配方为茶叶2.0 g、高粱酒6.0 mL、柠檬糖浆6.0 g,感官评分为90.0分,酒精度为12.3%vol,糖度为6.1%。配置型绿茶酒样品中含有酯类、杂环化合物、酮类、烃类、萜类、醛类、芳烃类等挥发性成分,样品中铅含量为0.040 mg/kg,六六六、滴滴涕、氯菊酯、氟氰戊菊酯、乙酰甲胺磷、溴氰菊酯、氰戊菊酯均未检出。配置型绿茶酒的茶香和酒香馥郁、和谐,色泽绿黄、透亮,口感润滑,回味悠长,且具有一定的保健功效。The tea plantation area in Southern Guizhou is 1.7 million mu,the total output of tea is 44,800 tons,and the total output value of tea is 6.73 billion yuan.The comprehensive output value is seriously low.In order to enrich the varieties of Duyun Maojian tea and improve the comprehensive output value of tea,green tea wine was prepared from Duyun Maojian tea and kaoliang liquor.The orthogonal optimization experiment of Duyun Maojian tea wine was carried out based on single factor test.The results showed that the best formula was 2.0 g tea,6.0 mL sorghum wine and 6.0 g lemon syrup.The sensory score of tea wine was 90.0,with alcohol degree of 12.3%vol and sugar degree of 6.1.The samples of configured green tea wine contain esters,heterocyclic compounds,ketones,hydrocarbons,terpenes,aldehydes,aromatics and other volatile components.The content of lead in the sample was 0.040 mg/kg,while BHC,DDT,permethrin,fenvalerate,acephate,deltamethrin and fenvalerate were not detected.The research shows that the tea aroma and wine aroma of the configured green tea wine are rich and harmonious.The green tea has green,yellow and transparent color,smooth flavor,long aftertaste,and a certain health care effect.
