摘 要:彩色水稻是一类极特殊的栽培稻,因外表颜色美观,既作为农田绘画的观赏稻,又因内在营养丰富,可以满足人们对功能性稻米需求。其功能成分花色苷被誉为天然色素,也是重要的次生代谢产物。花色苷在人体内还可能影响一系列的信号转导和基因表达途径,从而调节生理过程,具有非常重要的营养和药用作用,因此研究人员把目光聚焦于此。本研究以彩色水稻花色苷的种类、含量、提取工艺和分离纯化方法进行简要概述,对彩色水稻花色苷合成途径和结构基因进行着重阐述,并探讨了彩色水稻未来的研究方向和应用前景。为后继富集花色苷彩色稻的基因改良和彩色水稻天然色素资源开发利用提供参考。Color rice is a new type of the cultivated rice,due to are beautifully shaped and rich in nutrients,as an ornamental rice for farmland painting.It can meet people’s demand for functional rice,their functional component anthocyanins are called natural pigment,a plant secondary metabolism product.Anthocyanins may also affect a series of signal transduction and gene expression pathways in human body,thus regulating physiological processes,with important nutritional and medical functions,which has become one of the research hotspots nowadays and favored by people.In this review,the types,contents,extraction technology,separation and purification method of the anthocyanins in colored rice were briefly summarized,the anthocyanins biosynthesis pathway and structural genes of colored rice were described in details.The research direction and application prospects about color rice were anthocyanin.Providing reference for the genetic improvement of future anthocyanin enrichment color rice and the development and utilization of natural pigment resources of color rice.
